I cooked, you guys! I cooked! Yesterday after cleaning the house with Kyle, I threw a bunch of stuff in the crockpot for dinner. It was so good that I thought I’d share the recipe!
I originally saw the recipe on the Food Network and then looked it up online since it looked so good. It isn’t supposed to be a crockpot recipe, but it worked great that way! I did it on low for 8 hours and it was perfection.
In true Carolyn fashion, I only loosely followed the recipe. For example, I threw the garlic and a few tomatillos in the food processor along with the green chilis and poblano (which wasn’t pre-cooked, since I was doing the crockpot thing). I also didn’t measure…anything…
A couple other notes: It needed way more salt than they mentioned. And cheddar cheese, sour cream, avocado and green onions were the perfect toppers.
Kyle and I also threw our cornbread right into the chili and mushed it in. Highly recommended!!!
